Fall Class Series

Chowan County Cooperative Extension will be offering classes this fall. Here is a quick overview of what participants can expect from each of these fall classes:

  • Ricotta Cheese Making: A gentle introduction to home cheesemaking. Participants will learn how simple ingredients (milk, acid, and heat) transform into fresh, creamy ricotta—a quick process that offers an easy win for home cooks.
  • Canning Meat: A deep dive into pressure canning safety. Because meat is a low-acid food, this class will cover critical guidelines for safe processing times, atmospheric pressure settings, and proper jar sterilization to prevent foodborne illness.
  • Cranberry Marmalade: A seasonal favorite just in time for the holidays. This session will focus on water-bath canning techniques, balancing sugar and natural pectin, and achieving the right set and citrus-sweet flavor profile.
