Canning Soup W/ Meat

Did you know that people still do a lot of canning in this area of the state? There is still interest with the rise of people trying to eat local and cut out processed foods. More and more consumers are planting their own home gardens. The only problem is that there is a generation gap of people that didn’t learn how to can like their Grandmas did.  The role of Mary Morris, N.C. Cooperative Extensions Director and Family & Consumer Science Agent (Home Extension Agent) is to provide the community with research based information from North Carolina State University. You want to make sure that you have the right information before you preserve your food at home. Canning can be very dangerous with any low acid foods (green beans, butter beans, corn, etc.).  N.C. Cooperative Extension has a great support network that comes from the University,” if I can’t answer a question I call our NC State Food Safety Specialist on campus” says Mary Morris.
